I'm Back Baby!!!

After taking a few months off from my blog, I am back! The last few months have had a lot of ups and downs with my husband leaving for Iraq. I keep my fingers crossed and pray for him everyday to return home safe. Now that I am in my on routine, I have time to dedicate to myself, my friends, and last but not least my amazing pups!

Dinner tonight consisted of roasted zuchinni, stuffed with roasted vegetable quinoa. It was DEEE-LISH! I have been on a roasted vegetable kick and don't see it going away anytime soon. On the side were some spicy sweet potatoe fries. It definitely hit the spot after a long day!

Grilled Ahi Tuna covered in Pico DiGallo with roasted vegetables


Seared scallops and sauteed Shrimp with steamed baby bok choy and sauteed snap peas



Some veggie calzones and veggie/ pepperoni pizzas...





Last but not least is my favorite man in the whole world. My absolute hero who puts a smile on my face each and everyday. I love you baby!

Weekends

Weekends are the best! Epecially this time of year. The flowers and trees are blooming, the grass is green and of course it's sunny and warm! I snapped some photos yesterday of the backyard that I've been working on. It's starting to come along nicely slowly but surely. Here are a few pics...

Dinner last night was pretty late so I didn't get to snap a photo. It was a black bean and cheese quesadilla with some mango salsa. Today for breakfast was some scrambled egg whites and an english muffin with some blackberry jam. My new fave for lunch-gorgonzola and pear pita and dinner will be ancho flank steak on the grill.

I will be busy working in the yard today. Hopefully getting a nice tan as well! Hope everyone's weekend is off to a great start!

FRIDAY!!!!

I love Fridays more than anything! Everyone is in a good mood and easy to be around. The weather is beautiful and will be the nicest day yet this year. Too bad most of it will be spent at work! Luckily it's an early day for me which means extra time at the gym! I skipped yesterday because I had to work late and made the last bus home. I at least cut the grass with the push mower for some exercise! Unfortunately, I hit a huge rock and have ruined the blades now :-( That mower is only 2 months old! Oh well, it was bound to happen I suppose.

Dinner last night was delicios even though it was made pretty late. The sweet and sour chicken satisfied my craving for chinese food. It does seem quite higher in calories than it should though. I think I may save it for a once in awhile type meal for that reason. Plus all the sodium, I'm bound to retain some water from this. Here is how it turned out...

It looks pretty unappealing but it was nummers! Each portion was 1 cup of brown rice and 1 cup of the Sweet and Sour Chicken. I used fresh pineapple instead of canned. Therefore, I didn't have the pineapple juice for the liquid so maybe that saved some calories? I substituted fat free chicken stock instead.

Tonight I am making ancho rubbed flank steak on the grill with some green beans. I am not sure about a starch but will probably skip it. Saturday will be Chicken with a Mushroom and white wine sauce-one of my favs! I will save my carbs and extra calories for some wine out on the patio tonight. It's supposed to be really nice-and with a few hours in the gym this afternoon I think I'll have earned it!

Jumping on the bandwagon!

I have decided to give this blogging some serious thinking. I have decided this is the best way I know how to express what I have going on in my life. I need to have an ongoing project while hubby is away fighting for our country. :-) This is the route I have decided to go!

I have found in these past few weeks that I really enjoy researching new recipes and comparing my ongoing battle with getting my body into shape with others. I have found a new love for working out and enjoy challenging my body in new ways. I have starting tracking what I put into my body and have made the commitment to start making healthier choices. Planning is the key! Brenna has become a huge inspiration to me so I must say "THANK YOU!" We have bounced ideas off each other and have become pretty good at inspiring each other to do better at what we put our minds to.

For dinner tonight I am making Sage and Parmesan Crusted Pork Chops, baked sweet potato fries, and steamed green beans. For dessert, I will be making lemon bars. I have fallen into the rut of only eating chocolate type desserts when in fact, I enjoy trying new things! These lemon bars should do the trick! Here is how the chops turned out...





Tonight will be 30 minutes on the elliptical and 30 minutes on the treadmill. I have to get home to watch my Red Wings beat Chicago!
